Frena Bakery’s Honey Cake Makes 3 medium loaves Pan spray for greasing 2½ cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1½ teaspoons cinnamon ¼ teaspoon cloves ½ cup packed brown sugar ½ cup granulated sugar 4 large eggs ½ cup honey 1 cup oil 1½ cups orange juice Powdered sugar to garnish Photo: Liz Hafalia, The Chronicle Cinnamon and flour mix to make honey cakes. Cinnamon and flour mix to make honey cakes. Instructions: Adjust rack to the lower third of the oven and preheat oven to 350 degrees. Place 3 medium (8½ by 4½-inch) loaf pans on a baking sheet and grease with pan spray. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon and cloves. In the bowl of a stand mixer fitted with a whisk attachment, combine the brown sugar and granulated sugar on medium speed and then add the eggs one at a time until the mixture is combined, about 2 minutes. Increase speed to medium-high and slowly add the honey and mix to combine. Pour in the oil in a slow, steady stream, followed by the orange juice, and mix to combine. Reduce speed to low, slowly add the dry ingredients and mix until combined, scraping down the sides of the bowl as needed. Pour the batter into the prepared loaf pans, filling each about halfway full. Place the baking sheet with the loaf pans in the oven and bake until a toothpick inserted into the center of the loaves comes out clean, about 45 minutes, rotating halfway through. Place the loaves on a wire rack and let cool for 20 minutes. Invert the cooled cakes from the pan and sprinkle with powdered sugar. Allow to cool completely and serve.
